It’s What’s For Breakfast

I ended up making banana nut muffins for breakfast this morning; we had two very ripe bananas sitting around. They came out pretty good, if I do say so myself.

And here’s the recipe:

Banana Nut Muffins

1 beaten egg
2 cups flour
1/4 cup sugar
1 cup milk
1 cup water
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup vegetable oil
1 cup mashed bananas
1/2 cup chopped walnuts (I used pecans)

Preheat oven at 400 degrees. Grease muffin pan. In a bowl, sift flour, sugar, baking powder and salt together. In another bowl mix the milk, egg, oil, banana, water and walnuts together. Pour this mixture on top of the dry mixture and blend together until all ingredients are moistened. But don’t overblend, mix should be lumpy. Taking spoonfuls of your batter, fill the muffin cups. Then bake for 15-18 minutes. Makes 12 muffins.
