Cheese Soup

This is the easiest soup to make. It’s filling and doesn’t leave you with a sinkful of dishes to clean up afterward. The perfect bachelor or bachelorette fare. In other words, This Is for All the Lonely People….!

Cheese Soup

1-1/2 c. water
1 large potato, diced
1 c. finely diced onion
1/4 c. diced carrots
1/4 c. diced celery
1/2 c. butter
2 10-oz. cans chicken broth
1/2 c. milk
1/8 tsp. baking soda
10 oz. sharp cheddar cheese, grated
Salt and paper to taste
3 tbs. flour
3 tbs. cornstarch
1/2 c. cold water
2 tbs. finely chopped parsley

In covered saucepan, simmer carrots, celery, onion, and potato in water until tender. Add butter, broth, milk, baking soda, and cheese. Cook, stirring until well blended. Mix flour and cornstarch with 1/2 c. water and add to soup mixture. Heat, stirring until thick. Serve garnished with parsley.
